J: Jane     M: Michelle

 

J: I'm starting a new course, French cuisine. do you think you could help me?

M: Of course! I'm French, so I know all about French cooking.

J:  I want to start with the basics. What is a bearnaise sauce?

M: Well, it's a butter based sauce with added egg yolk with the distinct flavoring of tarragon, shallots, and chervil.

J: So, it comes from the mayonnaise family, right?

M: Yes, just like Hollandaise sauce.

J: Every time I try to make it, it ends up lumpy. I never know why, what am I doing wrong?

M: It's a difficult sauce to perfect because it requires special attention to avoid separation and curdling. When prepared properly, it is a smooth, creamy sauce.

J: So what can I do to stop it from going lumpy?

M: If you follow the usual recipe, egg, butter, white wine vinegar, tarragon, shallots, and chervil, you shouldn't go wrong.

J: And should I whisk it constantly?

M: Yes, that's why you get your problem with lumps.

J: OK. So I must keep whisking. What was your favourite dish as a child?

M: My favourite dish was always "moules a la mariniere". With bread, of course! Made with mussels, shallots, garlic, white wine and cream.

J:I guess that's beautiful with a big crusty bread loaf! On a cold night, sitting around the fire.

M: Yes. It's perfect. But I do enjoy many ever try a "croque monsieur" ?

J: No, I don't think I have. It's a kind of sandwich, right?

M: Not just any sandwich. It's the most amazing roasted cheese and ham sandwich in the world!

J: Really? Why is it so great. I mean a sandwich is just a sandwich? It's nothing special. Why is French food so highly acclaimed throughout the world?

M: I think it's because French chefs slave away, (or many years to perfect the best dish. That's why their food is excellent. And because the menu are written in French, it sounds delicious too!

J: OK, so tonight you are taking me to a French restaurant. I want to try everything!

J:我正开始学一门新课程,法式烹饪,你可以帮我一下吗?  

M:当然可以,我是法国人,所以所有的法式做法我都知道。

J:我想从最基本的学起。蛋黄酱是什么?

M:哦,那主要是一种黄油酱,外加蛋黄以及风味独特的龙蒿、大葱和山萝卜做成。

J:那么,这也是一种蛋黄酱了?

M:是的,就跟荷兰辣酱油一样。

J:每次我试着做蛋黄酱时,最后总是结成块状。我一直不明白为什么,我哪里做错了呢?

M:要想做好确实不容易,需要特别注意避免分馏和凝结。准备得好,蛋黄酱就会柔滑、呈乳脂状。

J:那怎样才能防止它凝块呢?

M:如果你用平常的配料,鸡蛋、黄油、白酒醋、龙蒿、大葱和山萝卜,应该不会有问题。

J:邱我是不是应该不停地搅拌呢?

M: 是的,我想这可能就是你凝块的原因吧。

J:好的,那我必须不停搅拌r。你小时候最喜欢吃什么菜?

M:我最喜欢吃的一直都是“葡萄酒炖贝类汤”,当然得外加面包。这是由贻贝、葱、蒜、白葡萄酒和奶油做成的。

J:在寒冷的夜晚,坐在炉火边,再配上一大条法式长棍面包,我想那真是妙不可言!

M:是的,简直是完美极J,。不过许多其它有名的法国食物我也很喜欢,比如,你吃过 “火腿干酪夹心面包片”吗?

J:没有,好像没吃过。那是一种三明治,对吗?

M:不单单是i阴治,它称得上是世界上最美味的火腿干酪三明治。

J:真的吗?为什么这么有名?我是说i明治就是三明治,没什么特别的啊。法国菜为什么还会在全世界享有盛名?

M:我想是因为法国厨师们不辞辛苦,多年来不停地完善菜肴,所以才会有这么棒。而且他们的菜单是用法语写的,念起来感觉更好吃。

J:那好,今晚你就带我去法国餐厅吧,我什么都想尝尝。
